Born in 1992 in the province of Varese, Antonio Vinciguerra has nurtured a deep passion for cooking from an early age. After attending culinary school, at the age of 18, he embarked on a journey that took him to some of the world’s most dynamic cities, including Berlin, London, Dublin, and Melbourne. There, he worked in high-end restaurants, delving into the philosophy of contemporary cuisine and refining innovative techniques.
In 2021, in Berlin, Antonio opened the first AV Restaurant, offering a cuisine based on local and seasonal ingredients with a sustainable approach.
After years abroad and the arrival of fatherhood, Antonio decided to return to Italy with his partner Silvia to fulfill the dream of a new AV Restaurant—this time in his homeland—while maintaining the same innovative and authentic spirit that has defined his journey.
AV Restaurant was born from Antonio Vinciguerra’s passion for contemporary, sustainable, and flavor-rich cuisine. Every dish is crafted with seasonal ingredients sourced from local producers, offering a gastronomic experience that follows the rhythm of nature.
Antonio’s cuisine does not adhere to fixed rules: it is a blend of modern and primal techniques, combined according to his inspiration. The tasting menu reflects this vision, helping to reduce waste while offering guests a culinary journey that evolves with the seasons and the chef’s creativity.
